- dried noodles (ramen, soba, or rice noodles) 1 portion
- egg 1 large
- chilli crisp oil 1.5 tbsp
- soy sauce 1 tbsp
- sesame oil 1 tsp
- rice vinegar 1 tsp
- spring onions, thinly sliced 2
Method

Soft boil egg
Bring a small pot of water to a rolling boil. Gently lower the 1 large egg into the water and set a timer for exactly 6.5 minutes for a perfectly jammy yolk. Transfer the egg immediately to an ice water bath to stop the cooking process, then peel it under cold running water.

Cook noodles
Boil the 1 portion of dried noodles in the same pot according to the package until chewy. While they cook, whisk the 1.5 tbsp chilli crisp, 1 tbsp soy sauce, 1 tsp sesame oil, and 1 tsp rice vinegar together in the bottom of your serving bowl.

Combine
Drain the noodles and add them directly to the sauce bowl. Toss vigorously with tongs until every strand is coated in the spicy oil. Halve the soft boiled egg and place it on top of the noodles, letting the yolk run slightly. Scatter the 2 thinly sliced spring onions over the top and eat right away while piping hot.
