- flour tortilla 1 large
- Oaxacan cheese or Monterey Jack, shredded 80g
- salsa 1 tbsp
- sour cream 2 tbsp

Scatter the 80g of shredded cheese over one half of the 1 large flour tortilla and fold it over.

Heat a dry pan over medium heat. Cook the quesadilla for 2 to 3 minutes per side until golden and the cheese is fully melted. Slice into wedges and serve with 1 tablespoon of salsa and 2 tablespoons of sour cream.

The most underrated move is a light smear of refried beans before the cheese.
