Ingredients
- mixed mushrooms (cremini, shiitake, oyster) 200g
- garlic, minced 2 cloves
- olive oil 1 tbsp butter plus 1 tbsp
- fresh thyme or 1/2 tsp dried 2 sprigs
- heavy cream 3 tbsp
- thick sourdough, toasted and buttered 2 slices
- salt, black pepper, lemon juice to taste
Method

Saute mushrooms
Saute 200g of mushrooms in 1 tbsp butter and 1 tbsp oil without stirring until browned. Add 2 cloves of minced garlic and 2 sprigs of thyme, then 3 tablespoons of cream to reduce.

Add aromatics and cream
Season with salt, pepper, and a squeeze of lemon. Spoon over buttered sourdough.
Slop Notes
Do not stir mushrooms immediately. Letting them brown first is what creates the deep savory flavor.
