Greek Salad with Chickpeas

The most refreshing no cook dinner. Salty, crunchy, and genuinely satisfying.

  1. Toss

    Combine the half can of drained chickpeas, chunked cucumber, halved cherry tomatoes, and thinly sliced red onion in a bowl. Drizzle with 2 tablespoons of olive oil, 1 tablespoon of red wine vinegar, and half a teaspoon of dried oregano. Season with salt and pepper and let it sit for 10 minutes so the tomatoes release their juices. Top with 50g of crumbled feta just before eating.

Slop Notes

Let it sit for 10 minutes after dressing. The tomatoes release juice that becomes the best extra dressing.
