- sweet potato 1 large
- black beans, drained and warmed 1/2 can
- avocado, sliced 1/2
- sour cream or Greek yogurt 2 tbsp
- lime juice squeeze
- fresh cilantro handful
- salt, hot sauce, cumin to taste
Method

Bake potato
Rub 1 large sweet potato with oil and salt, pierce it, and bake at 425F/220C for 45 to 50 minutes until soft.

Load
Split it open, fluff the inside, and top with 1/2 can of warmed black beans, half a sliced avocado, lime seasoned sour cream, and cilantro.
Slop Notes
Season the inside of the potato with salt and a pat of butter before adding toppings.
