Ingredients
- water or dashi stock 2 cups
- white miso paste 2 tbsp
- silken tofu, cubed 100g
- thin noodles (somen or ramen) 1 portion
- soy sauce 1 tsp
- sesame oil 1 tsp
- spring onion, nori, sesame seeds to garnish
Method

Make broth
Heat 2 cups of water to just below boiling. Whisk in 2 tablespoons of miso paste until dissolved. Add 1 teaspoon of soy sauce and 1 teaspoon of sesame oil.

Add and serve
Cook 1 portion of noodles separately and add to a bowl. Ladle the hot broth over, add 100g of cubed silken tofu, spring onions, nori, and sesame seeds.
Slop Notes
Never boil miso. Add it at the very end off the heat for best flavor.
