- soba noodles or spaghetti 100g
- peanut butter, smooth 2 tbsp
- soy sauce 1 tbsp
- rice vinegar 1 tbsp
- sesame oil 1 tsp
- honey or maple syrup 1 tsp
- sriracha 1-2 tsp
- spring onion, sesame seeds, cucumber ribbons to garnish
Method

Make sauce
Whisk the 2 tablespoons of peanut butter, 1 tablespoon of soy sauce, 1 tablespoon of rice vinegar, 1 teaspoon of sesame oil, 1 teaspoon of honey, and sriracha. Thin with warm water until it is pourable.

Cook and toss
Boil the 100g of noodles per package, drain, and toss immediately with the sauce. Top with spring onions, sesame seeds, and cucumber ribbons.

Natural peanut butter works best. The sauce keeps refrigerated for a week. Make double.
