Ingredients
- diced tomatoes (400g) 1 can
- onion, diced 1/2
- garlic, minced 2 cloves
- cumin 1 tsp
- smoked paprika 1 tsp
- chilli flakes 1/2 tsp
- eggs 2 large
- crusty bread, feta, fresh parsley to serve

Build sauce
Saute the half diced onion in olive oil until soft, 5 minutes. Add 2 cloves of minced garlic, 1 teaspoon of cumin, 1 teaspoon of smoked paprika, and half a teaspoon of chilli flakes, cooking 1 minute. Pour in the 1 can of diced tomatoes and simmer 10 minutes until thickened. Season generously.

Add eggs
Make wells in the sauce with a spoon. Crack the 2 large eggs into the wells. Cover and cook 5 to 7 minutes until whites are set but yolks runny.

Serve
Top with feta and parsley. Eat directly from the pan with crusty bread for dipping.
