Ingredients
- spaghetti 100g
- garlic, very thinly sliced 4 cloves
- good olive oil 3 tbsp
- chilli flakes 1/2 tsp
- fresh flat leaf parsley, roughly chopped large handful
- salt and black pepper to taste
- parmesan, butter toasted breadcrumbs optional
Method

Cook pasta
Boil 100g of spaghetti in well salted water until al dente, saving a cup of water.

Toast garlic
Warm 3 tablespoons of olive oil in a pan over medium heat. Add 4 cloves of sliced garlic and cook slowly until golden. Add 1/2 teaspoon of chilli flakes.

Combine
Add drained pasta and a splash of pasta water. Toss vigorously until emulsified. Add a large handful of parsley and toss again.
Slop Notes
Garlic must be sliced and toasted slowly to golden. Never brown or it becomes bitter.
