- cannellini or butter beans, drained 1 can
- good olive oil 3 tbsp
- lemon, juiced and zested 1
- fresh rosemary or 1/2 tsp dried 1 sprig
- garlic 1 clove
- crackers, crudites, warm pita to serve

Blend
Blend 1 can of drained beans, 3 tablespoons of olive oil, the juice and zest of 1 lemon, 1 sprig of rosemary, and 1 clove of garlic until completely smooth. Season well with salt.

Serve
Spread in a bowl, drizzle with more olive oil, and serve with crackers.

This also works brilliantly spread thickly on toast and topped with roasted cherry tomatoes.
