White Bean Dip with Lemon and Rosemary

Blended white beans with olive oil and lemon. A more interesting alternative to hummus.

  1. Blend

    Blend 1 can of drained beans, 3 tablespoons of olive oil, the juice and zest of 1 lemon, 1 sprig of rosemary, and 1 clove of garlic until completely smooth. Season well with salt.

  2. Serve

    Spread in a bowl, drizzle with more olive oil, and serve with crackers.

This also works brilliantly spread thickly on toast and topped with roasted cherry tomatoes.
