Ingredients
- butter lettuce, leaves separated 1 head
- champagne or white wine vinegar 1 tbsp
- dijon mustard 1 tsp
- garlic, minced 1 small clove
- excellent olive oil 3 tbsp
- salt and white pepper to taste
- shaved parmesan, toasted hazelnuts, sliced radish optional
Method

Make vinaigrette
Whisk 1 tbsp vinegar, 1 tsp dijon, and 1 clove of minced garlic together. Slowly stream in 3 tbsp olive oil until emulsified. Season with salt and white pepper.

Dress and serve
Gently toss 1 head of butter lettuce leaves with just enough dressing to coat lightly. Plate immediately and add parmesan or hazelnuts.
Slop Notes
Underdress rather than overdress. Butter lettuce wilts quickly. Add dressing at the very last second before serving.
