- day old cooked rice, cold 1 cup
- eggs 2 large
- neutral oil 2 tbsp
- soy sauce 2 tsp
- sesame oil 1 tsp
- spring onions, sliced 2
- frozen peas, chilli crisp, leftover protein optional
Method

Fry rice
Press 1 cup of cold rice into a hot pan with 2 tbsp oil and let it crisp without stirring. Push aside, scramble 2 eggs, and fold through.

Add eggs
Add 2 tsp soy sauce, toss, and finish with 1 tsp sesame oil and 2 sliced spring onions.
Slop Notes
Cold day old rice is non negotiable. Fresh rice is too wet and will steam instead of fry.
