- pre cooked beets (vacuum packed, not pickled), sliced 1 pack
- soft goat cheese 2 tbsp
- arugula or mixed greens 2 handfuls
- candied walnuts handful
- balsamic vinegar 1 tbsp
- olive oil 2 tbsp
- dijon mustard 1 tsp
Method

Make dressing
Whisk together 1 tbsp balsamic, 2 tbsp olive oil, and 1 tsp dijon. Season.

Assemble
Dress 2 handfuls of arugula lightly and arrange with 1 pack of sliced beets, 2 tbsp of crumbled goat cheese, and a handful of candied walnuts.
Slop Notes
Pre roasted vacuum packed beets are a completely valid shortcut and nearly as good as roasting your own.
