Ingredients
- cherry tomatoes 200g
- olive oil 3 tbsp
- garlic, minced 1 clove
- thick sourdough, grilled or toasted 2 slices
- burrata 1 small ball
- fresh basil handful
- flaky salt, black pepper, balsamic glaze to taste
Method

Roast tomatoes
Toss 200g of tomatoes with 3 tablespoons of oil, 1 clove of minced garlic, salt, and pepper. Roast at 400F/200C for 25 minutes until jammy.

Assemble
Top 2 slices of grilled bread with 1 torn ball of burrata. Spoon warm roasted tomatoes and all their juices over the top. Add basil, balsamic, and salt.

The tomato juices and olive oil are the sauce. Make sure you get all of it out of the roasting pan.
