Silky Egg Drop Soup

Better than takeout. Silky egg ribbons in a gingery, savory broth.

  1. Build broth

    Simmer 1.5 cups of broth with 1 tsp ginger, 1 tsp soy, and 1 tsp sesame oil. Add 1 tsp cornstarch mixture to thicken.

  2. Add eggs

    Slowly pour 2 beaten eggs in a thin stream while stirring gently to form ribbons.

  3. Serve

    Top with spring onions, white pepper, and sesame seeds.

Slop Notes

Pour the eggs in very slowly and stir very gently. Fast movement creates bits rather than ribbons.
