- ripe avocado, mashed 1
- dijon mustard 1 tsp
- lemon juice squeeze
- celery, finely diced 2 stalks
- butter lettuce or romaine 4-6 leaves
- salt, pepper, paprika to taste

Make filling
Combine 1 mashed ripe avocado, 2 chopped hard boiled eggs, 1 teaspoon of dijon, lemon juice, and 2 finely diced celery stalks. Season well.

Fill cups
Spoon the mixture into 4 to 6 crisp butter lettuce leaves and dust with paprika.
