Ingredients
- quality sardines in olive oil 1 tin
- sourdough, toasted 2 slices
- salted butter 1 tbsp
- lemon, for squeezing 1/2
- flaky sea salt, black pepper, hot sauce to taste
- dijon mustard and sliced cornichons optional

Toast and butter
Toast the 2 slices of sourdough until they are deeply golden and crisp. While the bread is still piping hot, spread 1 tablespoon of salted butter generously over the surface so it melts deep into the crumbs.

Open the tin of sardines and lay them in a single layer over the buttered toast. Squeeze the juice of half a lemon directly over the fish. Add flaky sea salt, black pepper, and your favorite hot sauce. If you are using dijon mustard and sliced cornichons, smear the mustard on the bread before adding the sardines, and place the cornichons on top for a briny crunch.

Brand matters enormously. A good tin of sardines in olive oil is a completely different thing from the cheap supermarket version.
